Cookie Sandwich with White Chocolate Ice Cream Receipe

Ice Cream Cookie Sandwiches are the perfect dessert for a summer day in the garden. Easy to make, just sandwich your favorite ice cream between two cookies and enjoy!
Ingredients:
- 225g flour, sifted
- ½ tablespoon baking soda, sifted
- ¼ teaspoon salt
- 150 g unsalted butter, soft
- 80 g light brown sugar
- 80 g of granulated sugar
- 2 tablespoons vanilla extract
- 1 large egg
- 100 g of white chocolate chips or pieces

- Preheat oven to 180°C. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the sifted flour, baking soda, and salt.
- Place the softened butter and sugar in the bowl of a Cuisinart stand mixer. Attach the flat paddle attachment and mix on speed 8 until creamy, scraping down the sides as needed.
- Add the vanilla extract and 1 egg and continue beating on speed 8.
- Add the remaining ingredients and blend gently on speed 4, until completely incorporated.
- Add the white chocolate chips, reducing the speed to 3, until everything is combined.
- Cover the Stand Mixer bowl with cling film and place in the refrigerator to chill for about 1 hour.
- Using an ice cream scoop, form the cooled cookie dough into balls and place them on the prepared baking sheets. Gently place your thumb on top and press the balls down slightly. Leave enough room for the cookies to spread out a bit.
- Bake for 12 minutes, until the cookies are lightly golden, then transfer them to a wire rack to cool.
- Place a scoop of your favorite ice cream between two cookies and enjoy immediately.
